More questions regarding new hotdog "walkup" retaurant close to Houston .

Still trying to do it right by asking the right people questions. Let me say up front how I appreciate the help and guidance. Two questions for now...what is the best way to serve melted cheese and what is the best product and where do I purchase it? Where is the best place to purchase the misc disposable packaging materials, ie, individual foil/tissue wraps, cups, t-out bags, boxes, cups, etc? My restaurant is really technically a concession even though it is an actual building. We will be taking orders and serving from under a canopy through windows located at the perfect height. The point is, it's all "take-out" style serving so I will be using packaging to accomodate this arrangement. I will have some tables under the canopy so people can sit outside and eat, weather permitting.

The best price on Foil/foil wraps and plastic warp is Costco......Look for a restaurant cash and carry in Houston that will have Hotdog boats and all your other needs................Whats is the cheese sauce used for...Chili cheese dogs or nachos???????????????

I was planning to us BillyB The best price on Foil/foil wraps and plastic warp is Costco......Look for a restaurant cash and carry in Houston that will have Hotdog boats and all your other needs................Whats is the cheese sauce used for...Chili cheese dogs or nachos??????????????? I was intending to the melted cheese on the dogs. Thanks for your help!

If you have an inside kitchen you could buy a cheese melter/ top broiler and melt shredded cheddar...If you want a can cheese/ just heat and serve they have a few different brands. I use a Dry amix with boiling water for nachos. If I had a choice I would do the Shredded Cheddar the taste will be better than any sauce......Bill

For cheese I use Baker's and Chef's cheddar cheese sauce. The reply upthread is correct-shredded cheddar IS a slightly better taste, but I found working in New Hampshire our ambient temperature many times inhibits a full melt, especially with other toppings. B&C is available in a #10 can at $8.00 or less and holds well for extended periods in a steam table. It is available at Sam's Club.
