My Mom's Party Chicken Squares (photo's )56k

I remember this growing up back in the 60's. I just found this recipe in my things.
This is her original from 1966.
I am getting ready to make it today.
You can easily half the recipe to make a smaller batch. You can see her notations for that.

I had to scan it because the paper was so fragile, so Here is the recipe in "photo" format.

    Yummers...some of that '60s stuff was so awesome. Looks like your mom had the same typewriter my mom did. Thanks for the recipe...I'm going to try it. Love any recipe that calls for "parsley and pimiento for color".

    Here is the finished dish.
    But the half portion makes a lasagna sized panful.
    It almost reminds me of chicken a la king, only in a casserole.
    And that's not a bad thing.
    I did make a couple additions to the recipe.
    I used Jasmine rice.
    I only used 2 1/2# of chicken breast's.
    Then I put dried cilantro to the rice as it was cooking.
    I added a can of mushrooms to the mixture.
    I sprinkled lemon pepper seasoning on the chicken before I cut it.
    I am not too sure about the mushroom sauce though. I think the dish is fine without it.
    I remember mom spooning the sauce onto the squares as it was cut and being served.

    I also recommend letting it sit about 15 minutes before cutting.

    This is a perfect dish for a superbowl party, or a large family dinner.

    The mushroom sauce is kinda greyish/brownish, and doesnt look appetizing at all.
    Maybe some kind of hollandaise, but that might be too heavy.

    I have not had this dish since the late 60's when my mother was active in the Eastern Star Organization.
    It sure did bring back memories when I took a bite out of it.

    Well, as far as I'm concerned it is poisonous. It has mushroom stuff, and I'm allergic to those things.

    I didn't recognize it from reading the recipe, but the picture of the single serving with the mushroom sauce sure looks familiar!
    My Grandmother used to serve that. I always left behind the pieces of mushroom and pimento, though...Hey, I was just a little kid - what did I know? Thanks for the memories, Tara.

    I would tend to think that solid albacore would work well in this dish also.

    Holy Cow!! It makes enough for -two- 9x13 pans worth of dinner. How many lumberjacks lived in the average house when this recipe was written? One can of mushroom soup for the basic recipe and two more for the sauce. This is a Campbell Cookbook recipe at its finest. The fact that it is typed and annotated makes your recipe an interesting read.

    Naw. Campbell's doesn't make hollandaise. Use Cream of Cheddar or tomato.

    This size recipe was used mostly for large gatherings for the club she belonged to.
    I took it to work on Friday, and they all pigged out and loved it.
    But we did try to figure out what kind of sauce should be on top.
    I didnt care for the mushroom sauce, so didnt use any.
    Maybe even cream of chicken soup as a sauce base would work.
    It would be aesthetically pleasing then.

    Looks like the casserole could be "Soutwesternized" a litte bit, then topped with some cheedar cheese soup mixed with a bit of Rotel...

    I am sure there can be many variations to this dish.
    And I bet they all would taste good.
    Maybe even with ground meat instead of chicken, and put some rotel in with the other ingredients. Just not sure if it might be too liquid with the rotel in there..
    I think I might try that tonight..
    I am bored right now, and was going to make them (and me) some American Chop Suey,
    but DD's idea has my brain in high gear...I have everything I need but the meat and cheese.
    Maybe even just topping it with shredded cheese and bake it that way.
    On my way to the store..
    I just might do some experimentation. My co workers will eat anything, and this makes the perfect portion for them.
    (even at the half recipe!)

    I'm making this soon and I'll be using cream of chicken soup as most of my kids don't like mushrooms. I'll also be making both 9x13 pans and betcha I won't have leftovers. This is great for large families too! I'm always hunting for easy recipes that can fill them up without me spending hours standing at the stove. Thanks!

    I liked the scanned recipe, I have many that look just like that, my grandmother typed many of her recipes- she could not cook very well but loved collecting and typing recipes

    This is why casserole recipes are so great. You can pick and choose and make alterations to your heart's content. Yum yum. Or yuck yuck. Just depends on what you pick!

    I think the cream of chicken soup would be much better.
    Even though I like 'shrooms, the mushroom sauce was dingy and dirty looking, and it really didnt taste all that good to me.
    I sh**canned it..LOL...
