No reason why you couldn't......I've made it many times with a bowl and whisk.

Bart - A stick blender is a wonderful thing and yes it works in a quart jar (wide mouth)
 
My new favorite style of potato salad is Steakhouse Style, tastes just like a loaded baked potato.  YUMMMMMMMY

My wife recently made a wonderful potato salad, best I've had in years. It was made with mayo, yellow mustard, ranch dressing, dill pickle relish, paprika, celery seed, salt, pepper and paprika along with of course potatoes, it also had eggs and chopped onion. A couple of options we did not use was pepperoncini and black olives. This stuff was delicious, especially the next day.
The recipe was from allrecipes.com and it was simply called "The best potato salad"

Miracle Whip is too sweet tasting to me - next time try Blue Plate mayo, better than Hellman's.
 
In addition to potato salad being a good side, I make a dish called cowboy beans I got from America's Test Kitchen that's goes well with bbq.

I grew up on Miracle Whip, but when I married, my husband ONLY ate Hellmans, so that's what I ate & it was hard to get use to. My daughter loves Miracle Whip because it's sweet and a bit tangy. Favorite sides with BBQ are Potato Salad & Coleslaw (during summer months) I serve more Beans with BBQ during winter months but we always have Coleslaw.

Of course, trust me to throw a monkey wrench into the mix.
 
I actually prefer a side with my BBQ of something acidic that will cut thru the fat instead of adding to it. Such as sold at my favorite BBQ in Dallas. A side of freshly chopped tomatoes, purple onions, chopped cucumbers and chopped celery in a vinegar based sauce. They also offer home made sweet bread and butter pickles which I also enjoy with my fatty brisket and ribs.
