My used equipment adventure Sun, 06/26/11 10:06 AM (permalink)
Well I am 4 days in and what a mess. I have prep stations, fry dumps, refrigerated equipment tables, and a ton of other stuff in my driveway. Neighbors are looking at me like I am crazy. I am going to cal a used equipment company in and ask them to give me a price on the fryers, soda machines and asac hoods.

Yesterday someone stopped by the restaurant and asked what we were doing with the equipment. Two nice ladies, they were looking for anything they could use in their restaurant. I sold them some really nice rolling shelves for dirt cheap and gave them a truck load of other things. On her second trip back she tells me she had been thinking. She offered me an opportunity to cook my ribs and BBQ at her placand sell them through her menu and we could split the proceeds. Her restaurant is in downtown Fort Pierce by the Federal Courthouse, so they et decent traffic. May be a god way to get started. I am going to ask her if I can have her raunt named as my commissary (which I had been worried about finding one).

It just goes to prove that it really pays to help people out when you are able to.

Brian, You wouldn't be the proprietor of the recently closed Smoky's would you?

no. I am just gonna do a food truck on weekends. Not ready to jump in with both feet. Plus, that building is cursed. No restaurant survives their for long.

If you're building a food truck and you don't have a sizeable garage, your yard is going to be crazy and for a long time too!  If I could go back and start my project again, I'd get my garage, tools, and materials super organized...maybe even rent a big workspace, buy time at the local car wash for equipment cleaning, thoroughly research equipment values (particularly clean vs covered in crud) before I buy or sell, hire help sooner than later...and maybe not even start the whole thing!  Haha!! I do love it but it's a big, tough, expensive adventure.  Most things wouldn't get started if folks knew what they were getting into.

Jump in head first and have fun!

i have a 200sq' covered porch, and its been taken over by various pieces of equipment, tools, ladders, you name it!....... i look at it, and then look at my 60sq' truck kitchen area, shake my head, and wish i had played tetris more often as a kid, lol

In tetris if you fill a row it disappears...when I fill a row, stuff gets stacked on top of it and then I need something from the bottom!

Why don't you try selling the extra items on a site like  restaurantstarter.com or craigslist or something like that?

                    Hi,

I live in CA and here you must store your truck overnight in a special place designated a 'Commissary', do you have this requirement in the state of FL?

Not sure (I am early into this). I hope not because there is nothing like that around here.
