NEW CHEESE STEAK STAND!

Hello everyone! This will be my first post to the forums and I am really excited to get this going. My cart will open on Feb 21st of 2013 and i am just getting as many of the finishing details together as i can. I will be selling philly cheese steaks on a college campus that will be made with fries and cheeze whiz on top (with the option of onions and peppers). First off i am worried about ordering the cart as i have heard mixed reviews about Top Dog Carts (i will be getting the TD36 with deep fryers attached) but they look like quality products and when i talked to the people working there they seemed very nice. Secondly i was hoping someone could tell me how much meat usually goes onto a philly cheese steak (1/4, 1/3, 1/2 lb?). Thanks guys!

    Ask your question in the pro hot dog forum at the bottom of the page, there are a few guys there with a top dog cart.
    Your going to open in 60 days, and have not ordered your cart yet? Have you seen one in person?
    How much research have you done?  Do you have a market?
    Do you know your competition?
    How much meat do they put in their cheese steak?
    Can you cook raw meat from a cart in MI? Can you have an open fryer?
    Do you have a HACCP Plan or what ever other safety plan is required from the HD?
    Do you know your health dept? Will they allow this cart?
    Do you know what city/county licenses are needed?  Insurance?
    Have you secured a location with the college?
    Do you have a commissary?
    What type of meat will you use? Where will you get your bread?
     
    A "Philly" Cheese Steak does not have fries and peppers as an ingredient.

    If you can't answer ALL the questions Chef Buba asks, you have no business spending your money on a cart and getting in the business!

    It's hard to believe that new people don't feel welcome on this site. The guy asks a couple of questions and gets attacked with questions that don't begin to answer the questions he asked.
     
    This must be that helpfulness I'm missing out on in the pros forum.

    the average portion for a cheesesteak is 3 oz.

    Travelin man, Chefbuba is just trying to save the guy a lot of wasted time and money. If he is not prepared to know these answers he needs to do more homework before going any further. Chefbuba seems harsh but in reality he is helping the guy big time.

    I don't care if he is harsh or not. I am not one to mince words, myself. But, I don't see the point of harassing a first-time poster with questions, rather than answering the questions that were asked. There has been recent discussion on the reasons why new users feel unwelcome, and this might be a prime example.

    yep, I read other web sites how a person just bought a cart and now cant use it for one reason or another.
    and so it's now a huge bird feeder.

    Well, then put me in the penalty box. I don't see it as harassment.
    I welcome the OP with open arms, it's just when I read his post, I see a deer in the head lights.
    Is everyone a winner? Do we all deserve trophies? No.
    As someone in foodservice for 30+ years, and 10 of that dealing with mobile foodservice, the op's post is full of red flags. Rarely will you find a health dept that will allow cooking of raw meat on a cart, in addition to the deep fryers.
    I hope he does come back with a comment that everything is hunky dory, all his ducks are in a row, he has the health depts blessing and a two year lease with the college on a busy corner.

    6oz of Fresh, Choice Beef in every one of my cheese steaks. 3oz is nothing but a bread sandwich.

    I agree with BUBBA I get people all the time come to me for info on how to get up and running. they put the cart before the horse. They buy a cart for way to much money, then the HD will not licence them then their stuck with a cart that wont work in your state. the manufacture blows you a bunch of smoke on how they got carts all over the streets in certain states they get the sale and your stuck with a cart that needs modifications and added expense. they all think they can go into walmart buy a 8pack and be in business. What I tell them is they better do their homework just like BUBBA did!

    I agree.
    thats why some manufactors give you the plans and diagrams for what you want to buy before you buy it so you can take the plans to your HD and ask them if this will get approved. but like you said, some dealers wont do this at all. and most of the good startup courses say this too.

    ChefBuba, if a person knew the answers to those questions wouldn't he/she be in a better position to have a successful business.
     
    ChefBuba, if a person knew the answers to these questions, wouldn't there be a better chance they would be saving themselves and their families from potential financial loss.
     
    ChefBuba, if a person knew the answers to these questions, would they be offended. I would think if they could answer these questions, they did their homework and were at the top of their game.
     
    Chefbuba, wouldn't it be a good idea to have all the answers to these questions so the HD doesn't close a business down on the first day, causing food loss and a lot of loss time.
     
    Chefbuba, Isn't it true that the food business isn't like buying a shoe shine box and picking a corner. There is a lot of leg work, food knowledge, product testing needed to even begin this venture.
     
    Chefbuba, thanks for putting the real questions on the forum, business isn't easy, business isn't like going to kindergarten, in most cases you don't get to do it over if you fail......................

    Maybe they just went away to find the answers for the Chef.
    Could be they don't want to be one of the 80% that fail.
    Selling food is a lot different than eating it.
