My wife and I went through this when we were setting up to operate our hot dog stand. Your county health department will let you know what items you must have that meet NSF (National Sanitary Foundation) requirements. For the most part, it means stainless steel or other non-porous materials. As an example, I made the handwashing sink from an NSF steam table pan by cutting a hole in the bottom and installing the parts for the drain. Voila! A handwashing sink, big enough to meet the requirements, and a whole heck of a lot cheaper than buying an NSF approved sink unit.
