I do love the NY strip.. Olive oil, a little Kosher salt and a bit of rest... Nothing better.. Yours looks great John, you might have just inspired me to get out of the house and face the 98 degree temps to secure a couple of cuts...

Baah Ben, I never went for the whole loin(NY Strip), way too much meat. I will buy a whole tenderloin and cut it up myself. The leftover meat trimmings make a great beef soup.
