NY original Papaya King on 'Originals by Emeril' last night

On the same episode featuring Peter Luger and Oyster Bar at Grand Central Station Emeril profiled Papaya King.  The say the all beef, natural casing hot dogs are smoked five days.  Could that be true?

    I may have to drive to Hollywood and give it a try.
     
    I'm not sure if I'm good enough to discern between a 4 and 5 day smoke.

    I owned a smoked meat business.
    5 hours maybe. 5 days, no way!
    It would become Jerky!

    I believe it's because they are cold smoked.

    I smoke 2 packs a day & my lung feels great.
    hot dogs on the other hand I eat but don't smoke em

    I saw the show, and they definitely said they smoke them 5 days......I was also very surprised at this...
     
    They have to be cold smoking.....overkill in my opinion.

    John Fox knows what brand Papaya King buys.  He mentioned it here once.  If I recall correctly, it is one of the common NY/NJ brands.

    Papaya King uses a natural casing all beef Sabrett frank. They DO NOT have a special recipe made for them. I have gone into detail regarding this in the past. The dogs do spend time in a smokehouse. How long, I don't know.

    I had a couple of Papaya King dogs last month in Manhattan and they were great but very small dogs, much smaller than the Sabretts I buy at the grocery store (about 5 or 6 dogs to the pound). I thought I read somewhere that Papaya Kings dogs were made to their own specs.

    Papaya King uses Sabrett natural casing franks. I've gone into detail regarding how I found out and don't feel like looking for the posts or going into it here.
     
    Just let me say that the natural casing Sabretts sold at the supermarkets are 8/1. Those served at Papaya King are smaller. Used to be 10/1. Now it's anywhere between 10/1 and 12/1. Same recipe, different size. There is no special recipe for Papaya King, Gray's, Katz's, or anyone else. If they claim this, they are lying. This has been confiormed to me by people in the industry including distributors, people at Marathon/Sabrett, and some at Papaya King.
