Nashville hosting first HOT CHICKEN FESTIVAL!!!

This 4th of July Nashville will host a Hot Chicken Festival complete with a chance for 6 people to compete in an Amateur Hot Chicken Cookoff.

I think I am going to start testing this weekend and see if I think I can hone my skills enough to be one of those six. Now I got to go sweet talk my buddies at a couple of the local soul food places and find out just what they know about how it's done.

Anybody here tried to duplicate it yet? If so, what works and what doesn't? The only problems I see are they are going to provide the chicken and the deep fryer - I have heard Prince's marinates their chicken first so that is problem #1 not getting the chicken in advance, #2 is everyone knows the secret to REALLY good fried chicken is a well seasoned black cast iron skillet - deep fryers are for fast food joints.

    I don't know how it's done, but as a hot chicken consumer and aficiando, I am willing to submit my taste buds to your efforts this weekend. Don't expect praise unless your product is up to snuff.

    i marinate mine in hot sauce crystal is # choice for me its a little milder,#2 petes little more heat though....and it don't need to be in there long.....breading flour salt pepper onion powder,garlic powder...and a good bit of dried parsley (parsley is a good source of iron so maybe it mimics the iron skillet) i'd say fry temp should be 360-365....i fry all my chicken in lard....but do what you feel and good-luck

    Well Pete - I missed out on the deadline to try for one of the 6 spots for the cookoff but I am going to work on the recipe. When I get it close you'll have to come over and give it a try and help me get it to perfection. I have some pretty good ideas on how to get it right just need to find time and an audience for it. We're getting ready to go on vacation so it may be the end of the month before I have too much time to play around with it much more.

    Unabashed - you are close but the breading is really more cayenne than anything on Prince's and most of it around here so that is what I am trying for. Has to be just the right combo of flour, cayenne and spices.

    Darlene - glad you like the almonds. They are always a hit around here - I knew you couldn't loose with any of the T&T recipes I sent you.

    I wish I had been there. Prince's was a favorite of the most recent Roadfood tour. Sounds like the beginning of a great thing.

    I forgot all about it until about 1pm and knew by the time I got there it would be too late. As soon as I get back from vacation I promise I am going to work hard on developing us a recipe to post here. Going to call in some favors and some connections - a girl's gotta do what a girl's gotta do to get the recipe and I could have a few dirty tricks up my sleeve......

    I love lobster, scallops and a Prime Porterhouse but if the chicken tastes as good as the picture looks (and I'll bet it does), I'd have a hard time choosing my favorite!
