Need HELP! Need a good grease cutting formula that WORKS!

All right, here is my problem... In the Great Lake States, the EPA or some useless bureaucrat somewhere made it illegal to use "Phosphates" in cleaning products to save the planet. The phosphates are the grease cutters. My Dawn dish washing soap now just moves the grease around and no longer dissolves it which is just nasty in my book. But, my problem now is trying to clean the grease off of the stainless steel walls inside my little trailer. I have tried some commercial cleaning products to no avail, they just move the grease around. I checked all of my over the counter products that used to work and all are useless in my book as they are all "Phosphate Free". The only product that I found to work is Automotive Brake Cleaner, which I do not want to use inside the trailer for obvious reasons. Are there any old grease cutting recipes out there or have any of you found a product that is phosphate free that will actually CUT grease and not just move it around. HELP!
 
Also, could you guys and gals check your dish soap to see if it too is labeled "Phosphate Free", it will be on the back of the bottle. I have heard that some states are still able to get the old formula of cleaners that still work. Maybe I could get someone to send me a case of Dawn dish soap with the phosphates.

Try castrol super clean....purple jug....about $10 gal at the auto parts store.
That's what I use on the hood, filters, behind the broiler and any other non cooking surface that needs.... Spray it on, wipe it off removes the grease real easy.

I buy a jug of Phosphate Free pink stuff by the gallon. Out cleans Dawn. Really cuts the greases but decent on the hands. We use it as dishwashing soap and hand soap (straight) both on the food cart and at home. A little goes along way. It doesn't suds up heavily but even when the "soap suds" are gone, It is still working (add water and it starts sudsing again even after washing a greasy frying pan). We buy at Sam's club. I also love the ProForce floorstripper... I clean my paint brushes in it... it will clean a paintbrush with dried on latex paint right down to the synthetic bristles if you soak overnight. Natural bristles will completely melt away though... you don't want that on your hands... I've been cleaning our skoolie down with it... removes permanent marker too.

"Greased Lightening" available by the gallon for about $12 at AutoZone. I've also bought it at SAMs club. Full strength, it will do a great job on hoods, filters, walls. Not likely safe on contact surfaces though.

Yes, Greased Lightening is one of the best grease cutting
cleaners I have ever used. I use it in my commercial kitchen for everything.

Hi, getting in late here, but for future reference ...
An old friend, Prison Chef, once told me he uses the cheapest bottle of lemon or lime juice to clean greasy things like grill tops, and I have used it everywhere.  Also, we purchased a small steam cleaner to do the hoods and filters as well as any other stainless surface, it is Brilliant!  Not the smallest hand sized one, but one that looks like a small canister vacuum.  It produces loads of steam and cuts through the grease.  We generally use a putty knife or some kind of scrubby pad with it.  Works well for large areas and the Health inspectors love the idea as it sanitizes too.  Small enough and easy enough to get out daily or weekly.  We do BBQ, and rub and grease are always getting stuck on tough.  Highly recommend this method.

PS ...  The unit we have cost in the range of $100 to $150 so it is cheap enough, especially when you take in the cost of buying cleaners and resupplying.
 
 
 
 

I used to use Castrol on my BBQ ... it worked superbly.

I use a Steam Genie at work. I also like Simple Green, If that doesnt work go to a welding supply store and ask them.
