Need a great coney dog recipe

I am making a coney sauce for hot dogs and I am not happy with it. It is simmering in the crockpot now and I can taste that it is too sweet for me. I remember having this meat sacue where it was not sweet but just filled with flaor and delicious. We had it at a small restaurant in Elmira NY and that is all they sell. I would love to find a recipe that is not sweet. Does anyone have one?

When I don't use my own chili on hotdogs I use Worthmore Cincinnati Style Chili out of a can - it tastes better to me than Skyline or Gold Star canned chili and it is cheaper also. The recipe for it is probably similar to this one: http://homecooking.about.com/od/beefrecipes/r/blbeef89.htm This is a pretty common one to get this kind of taste. It is not sweet - I do not like it sweet either.

I made the conye sauce recipe and also made your recipe. The recipe you suggessted won, hands down. I have decided that coney sauce is not for us.
