Different dogs grill or steam differently. First Ball Park dogs suck IMHO. But that said a roller grill if used correctly is certinalyone way to go IMHO.
The star 35SSA isn't a bad unit and you can steam buns at the same time, but I use my microwave and Sam's Dogs and they take 60 seconds. I know a bunch of people are going to howl about that but it works. I hit a preset for 60 seconds then when it gets to 08 seconds throw the bun in and both are hot and pretty good.
But that said I don't depend on hot dogs for my living I sell far more BBQ than dogs. In fact my average customer buys one too munch on, on the way home with a couple of slabs of ribs. Or they buy one for their kids. If this is the auction trailer post your customers are not going to be "Hot Dog Aficionados", they are looking for a good sandwich and hot or cold drinks depending on the weather from a clean joint.
Don't make your efforts more than what you need. (poor choice of words)
Just give them the basics with a very clean working environment and decent prices. I'm an auction nut and attend many of them every year, in fact have been to two or three in a single day last summer. Most vendors at auctions are dirty, over priced, and serve junk food. It's very rare to get a decent sandwich while at an auction in this area. Be clean and give me a hot dog with fresh chopped onions, mustard, a soft drink, and a bag of chips and I'm back to bidding and buying.

PS How about a good Panni Grill. I just bought a brand new Star Panni Grill on EBay for $350.00, including shipping. You can cook a lot of different sandwiches on a Panni grill including Dogs. You don't have to worry about a big sink to clean them so the health department shouldn't be a concern. But a good Panni Grill as mine is is 220 volts, although I have a cheap one in my garage(an auction item LOL ) that is 110 volts and I have done dogs and bratwurst on it before, and they brown nicely, and look like they are grilled.
