 Need some help with buns on the cart.

Need some help with buns on the cart. Thu, 05/21/09 10:46 PM (permalink)
Had a good day on site. 30.00 more then yesterday. First repeat customer.  Had a mini twister hit me, turned half of my umbrella in side out.  Blew a table out to the road and blew foil wraps over a ½ mile up and away. If you look in the 2nd picture link  you can see a bunch of wraps way up there.
I have something going on that and not sure why. Need your help with it. I keep burning my towel that I have under the buns as I steam them. I am adding some picture links to show the setup.
 I am using a ½ perforated pan in a deep ½ pan. My perforated pan will not set all the way down flush.  Any help would be great . Thank s tim

    Do you have water in the bottom pan? Or is it just going dry and heating the hell out of everything?

      plenty of water in the bottom of the pan. When I get it dialed in the buns comeout great, but still burn the towel.  tim

        I go thru the samething. I think it has to do with the amount of heat hitting the bottom of the steamer pan. I put a buffer so the towel doesn't lay flat on the bottom of the pan. They sell wire roasting racks that fit onto a steamer pan. they also make them for 1/3 and half pans........Bill
