Need some help with numbers

So I just booked my first weekend gig, apart from where I am during the week. It's a 2 day dog show, there are approx 1000 dogs entered, so I am guestimating that there will be approx that # of people there throught the day, some dogs may have 2-3 people there others none...they are being shown by a professional handler who might enter 10 dogs.... plus there will be onlookers, it is in a public recreation area. So lets just say that there are going to be the 1000 people for each day... How many of them are going to eat? 25%- 50%, and are they going to buy a quality sandwich at a fair price from me, or eat the frozen, packaged crap the other vendors are selling? There are 2 other vendors there, lions club, doing breakfast, burgers and dogs, another guy doing beefalo burgers, dogs, nachos etc.. I am giong to stick with my sandwich menu... take a few things off.. but do my Tri-Tip over apple wood... The smell of that cooking will get them runnin for a sandwich. I will stick with my regular prices..no gouging!.. I don't want to over buy or run out on my first gig! Any advice?? Thanks!

Congratulations on your gig! You can drive yourself crazy guesstimating how any people will be there. Is this the first show ever...one shot deal? No previous years of numbers to go on? A show is a show. When dogs show there are spectators. Gotta get those numbers from previous years or come up with an average capacity based on seating if there are tickets general area size etc. Professional trainers may show several dogs...but do not handle them alone. One leash 10 collars is not how it happens. Is it strictly for local dogs or does it include people and pups traveling a distance? Local dogs only will bring more people with them. Never bank on "are people going to eat crap or my wonderful goods" because the lines at chain restaurants and in the fast food lots of America will tell you that no people do not always go for the best quality food available. Try to work in a few meatless offerings in any event that includes animals and animal lovers. Vegetable fruits etc. Maybe bring some high quality treats if there are going to be spectator pups. You keep to what you do best and try to avoid going into other offering areas of what the other vendors are serving. You have the best shot at picking up the most business with excellent exclusive selections at a reasonable price for an event. Do not undersell the prices. It is an event. Take your share of business.

Hey Buddy, I wish I could help, but there is no answer...I would ask the event organizers if they could tell how busy the food area gets and the times the show breaks. I would also ask if they had this many food trailers last year and if anyone dropped out for any reason. The reason I'm saying this is because they may have had 6 food trailers last year and maybe some people didn't feel it was a money making proposition. I wouldn't make any sandwiches using mayo, left over tri tip goes into a chili, my 2 cents!

Why no mayo?.. sandwiches are made to order... There not sitting out to fester in the sun.. No problem with the tri tips... no leftovers.. only cook a couple at a time and slice to order.. it is also a regular daily menu item.

What kind of sandwiches do you make?

What kind of sandwiches do you make? No tuna or chicken salad on this one... Just a combo meat sub, cheese steak, tri tip, fries, chili cheese fries, soup, and maybe a breakfast burrito.

There getting 4bucks for pancake berakfast and burgers....I was hoping for $4-6 range for burgers... I will just have to wait until the other vendors hang their shingle to price my stuff and adjust the portions accordingly. I spoke with the coordinator tonight, confirms approx 1000 both days, a few more Sunday, told her that I would prep for 200+ both days, when it's gone, it's gone!
