This food service product has been around for a long time. Does anyone use it? Anyone have ways to fix it up or spice it up?

    I'm using the ChefMate hot dog chili sauce... as is... outta the can (not allowed technically to spice it up), and it seems to be working out fine for me. The guys are now looking for my chili n cheese dogs!!

      Thanks Janski! Good to know that it works. It's ben around for 50 yrs. or so... so somebody must like it. I didn't know you could not spice it up. Not sure why but I am sure there is a reason, maybe.

        "Not spicing it up" is a regional thing. My Health Department lets me carry and sell prettymuch whatever I want, as long as I heat everything on the cart (no pre-heating at home) and I don't sell any homemade/doctored-up concoctions (as I'm not working out of a professional kitchen). Other areas of the state or the country may not have that restriction, but I do.

        I'm sure if the sauce needed a little spicing up, no one would know if a shot or two of Hot Sauce got "dropped" in, or maybe a touch of garlic... mmmm... I wouldn't go much beyond that though.

          Thanks again Janski. We will keep your hot dog sauce secret.

          I have heard that Chef-Mate chili may be able to get fixed up to taste pretty good.

          There is another food service chili, mentioned here at Roadfood, that may be better? Whay brand was that, hmm?

            Let me revise my original thoughts on this.... I was recently told by ONE honest kid who comes to the field pretty regularly that the "hot dog chili's not all that great". So, I've recently tried the Chili con Carne (also by Chef Mate) which is not as pasty and has meat and spices in it that the other does not.

            I had the kid (James) taste test it for me... and he's decided that this one is a winner "way better than that other stuff"

              I like castleberry brand. it takes like dairy queen sauce, and have always loved it.

                  Unlike you or me, most people don't like the bean based sauces. I've always enjoyed them for a nice change of pace. Also glad to see Castleberry is making a comeback after those troubles last year. Nothing to write home about, but good flavor for cheap.. Have to love them for that!                     Chef-Mate is a really good product but I usually accidently drop a little extra meat in it, makes it nice concistency and maybe a touch of garlic powder (not too much) to give a liitle tang.

                      Wasn't aware there was a problem with castleberry. Shows you how much I actually have a chili dog. But do love one every now and then. What happened?

                        Nightshift.. I wouldn't really call Castleberrys a Chili sauce, more like pureed flavored bean sauce. But it's all good, especially at 55 cents a can.
