I've heard of people dissecting west coast buns ... doesn't work. I've been thinking the same thing, a dog just isn't right without the right kind of bun ... (Dogs aren't a big deal out here. Coincidence?) Maybe there is a place they can be mail ordered, in bulk, then frozen? Nissen is my brand of choice.

Typically, a side-cut bun has one side thicker than the other. Make a cut in the thicker side and widen the opening by removing the portion of the bun between the new cut and the original one. Then, using a serrated blade remove the outer portion of the thick side. This will leave you with a bun that has two flat sides. Then, just butter both sides and toast them.

I recall seeing a recipe in a glossy cooking magazine several years back as part of a lobster roll recipe. I thought it might have been in Gourmet, but it doesn't come up on Epicurious. Based on our subscriptions in the past, if it wasn't Gourmet it was probably Martha Stewart. I do recall that they were baked in a single flat loaf in a regular pan and then sliced into rolls. Sorry I'm not more help.
