I didn't notice that when I looked at the list. I just saw the Fried Southern Hospitality with the pork greens & cornbread. Oh...and I'm like on the verge of getting my ass kicked about a piece of twice-fried chicken...when these things will be going down in Texas.. Lol A biscuit/gravy experiment was posted a few years back. Don't know if it will be the same. It will be interesting to at least see what happens. I guess. In MN I would have... Poutine yum yum yum! Eggplant fries I don't know which ice cream. The bacon comes in a cute little bacon cup and the cereal killer ice cream is usually very good (Christina Tosi at Momofuku Milk Bar in NYC invented that concept). If they had Cap'n Crunch flavor I'd do a 50/50 split with bacon. This would be after running in the 5K Milk Run at 7:45 am... http://www.mnstatefair.or..mpetition/milk_run.html

This year the "Big Rib" (I would have called it the "Fair Rib" but nobody asked me)will steal the show at the California State Fair.... The Big Rib is 2 pounds of USDA prime beef attached to a 17-inch-long rib, giving a new dimension to the "on a stick" template. "We needed to find a barbecue product to compete with the turkey leg, something different but similar," explained Big Rib creator and veteran concessionaire Dominick Palmieri. "Everybody wants something on a stick, so the rib bone is the stick. We did six months of research and development to get it to where it is." Chicken Cracklins and Fried Eggplant are Southern staples. Chicken Cracklins even sold commercially in 3/4oz bags at quickstops.

The 2nd Ave. Deli (home of the Instant Heart Attack Sandwich) welcomes customers with a bowl of gribenes (fried chicken skin). Pork Rinds are a popular snack. I've never seen a bag of Chicken Cracklins' around here. I wish. I'll have to look for them. I predict duck is the next item in the skins game.

Here are some of the new items for the Wisconsin State Fair... State Fair is just around the corner. Courtesy of the Milwaukee Journal Sentinel here is a list of some of the new food at this year's fair: It's a (bacon) wrap: How about a deluxe deep-fried bacon-wrapped cheddar hot dog on-a-stick? Or perhaps some deep-fried bacon-wrapped Tater Tots on-a-stick? Or for the purist: deep-fried bacon (bacon chunks battered, deep-fried and served with dipping sauce). No, bacon is not going away. Is it Thanksgiving already? Sweet potato fries with marshmallow dipping cream, anyone? Or perhaps some deep-fried stuffing on-a-stick? Banana-fana: Sweet Chimi-Nutella encloses banana, Nutella, cinnamon, pecans and powdered sugar inside a flour tortilla, while the Fat Elvis on-a-stick features a peanut butter cup in banana batter with -- what else? -- bacon. Bratwurst bonanza: The Wisconsin steak & brat sub pairs thinly sliced steak with sliced bratwurst, all topped with cheddar, sauteed onions, brown mustard and pickles on onion cheddar bread. The Reuben brat is Wisconsin's favorite sausage dipped in rye batter. Beer here: New for beer lovers: Lakefront Brewery beer flights and the beer float (craft/import beer and ice cream) Deep-fried: New to bubbling oil this year -- brownies, shortcake, cheesecake, Twinkies, ice cream, cookie dough and pizza (served, incidentally, on a stick) On the sweet side: Sprecher soda sorbet, in grape, root beer and orange flavors; red velvet funnel cakes with cream cheese drizzle. And, drumroll -- frozen custard. Oddly enough, this frozen favorite has not been at State Fair before, at least not in recent history, according to Chuckel. For the Irish and wannabes: Green Irish salsa with homemade chips, Irish meatball sliders We're having trouble imagining: Pork doughnut (sugared Bismarck stuffed with bbq pork), stuffed fish on-a-stick, goldfish cheesecake on-a-stick (batter-dipped cheesecake in the shape of a goldfish), chocolate-covered mozzarella cheese sticks, the pot roast burger, the Irish roast beef sundae. Naturally: Gluten-free chocolate chip cookie dough with gluten-free chocolate coating 'Cuz bigger is always better, isn't it? Mega Dog on-a-stick -- a super-sized, 18-inch corn dog

There really needs to be a reality show about State Fairs. It would be very interesting. A combination of behind-the-scenes product development through sales...and people willing to walk around holding and eating things...like that big ass corn dog. Marone...that's big.
