New Member intro and input wanted
My name is Jim and I have an addiction....:)
I have been doing events in a 10 by 20 tent for the last 4 years. I make out ok during the events. I am getting ready to put together a trailer from a 24 ft enclosed car trailer.
My menu at the events as follows:
deep Fried twinkies
deep Fried candy bars
deep fried calzones
deep fried pizza
sausage peppers onions
real philly cheese steaks
Fresh fruit smoothies
Fresh squeezed lemonade
I am thinking about adding a smoker also.
This is a partial list, but you get the idea.
I know that I have to pair down my menu from a trailer because I dont have as much room. Cant fit 4 cooks in the trailer :)

Also, if there is anyone from Delaware that has built there own rig, I would be real interested in talking to you about requirements for office of engineering. I have spoke to them and the only thing they will tell be is non pourous, easily cleanable surfaces for everything, but they want Man, Mod, and spec sheets for everything right down to the water tank and grey water tank.
I have several stainless counters that I had fabricated that would fit perfect, just don't know if I can use them.
I have read every build page back as far as 30 pages and I have used the search button.
I have a few other questions, but that should do it for now.
I certainly thank you for your input from those more knowledgeable than me. I have never worked out of a trailer so this is a new aspect for me.
