 New into the concession business

Hi all new to this site and the mobile side of the food industry!  Im in the process of putting together my own trailer and Ive got a couple questions and concerns. Alittle back ground ive been researching the business for alittle over 2 yrs now and just about to take the plunge, I have decieded to "build" my own trailer, Im having a 22' trailer built and i will do all the rest of the installion of equipment and nesacery items.
First and foremost my biggest concern is getting into events and festivals (located in so. cal) I do realize that event corridnatrs want a nice looking trailer and a unique product every event has there hamburger hot dog items, but are they any thing else I need to know? I just dont want to build his trailer and have a 35k investment sitting in my driveway. I have found a company that has all the events going on in california throughout 2011-2012 which is extremtly useful.
Also how is the concession business in this economy? It seems everyone is saying jump on the bandwagon if you want to make a ton of money which may be true but doubtfull, I do know that this is not a relaxed job its a 12-16 hour a day bust your ass job.
So if someone could answer some questions for me id really appreciate it!!

    Also so everyone doesnt say go get a job at a resturant to experiance the work, I have been working at my family business of McDonalds resturants for 9 yrs now.

      Welcome to Roadfood!
      There's been much discussion on here about the concession business, fairs, events, etc. Don't know if you've followed any of it but if not, I suggest you use the SEARCH function on here to get as many opinions as possible.
      With all due respect, running a trailer where you don't have as much control over external influences as compared to McD's tried and true systems, marketing etc can be challenging. I'm sure your McD experience will be helpful but be prepared to expect the unexpected!

      1. Promoters Lie!
      2. Most Promoters Really Lie!
      3. Refer to Rules 1 & 2!

          They'll also tell you "You're the only one that will be selling "Sushi on a Stick" and you go and there are 5 other "Sushi on a Stick" Vendors!
          "You'll be in the Highest Traffic Area" and you're not.
