New member introduction

Hi new member from Austin, planning on bulilding a food truck to be ready to go early next year.  I currently have an OLD 1970 Ford P350 that I was going to use.  After much deliberation I have decided to sell it and buy something a little bit newer.  The old Ford does not have power brakes or steering and the ceiling is only 6' 0" high without anything mounted to it.  I have my eye on a 1986 Grumman Olson, that once was a Fedex truck.  It is equipped with the original shelving and I was told that removing them will make the sides flimsy - anyone have experience with this type of situation?  Thanks in advance for your input.

It sounds very similar to what I'm building right now. Even after I tore everything out, the sides weren't that flimsy. After framing out the inside, I don't imagine it'll be flimsy at all.

FedEx & UPS trucks get a lot of HEAVY wear.
They don't get rid of them unless it's not worth the cost of maintaining them.
Be sure to have a good mechanic check it out before you buy.
