Hello, I’m new here and have been reading lots of great stuff on this site. So the wife and I are thinking of getting into the street fair festival food business. For the past several weeks we have been going to different festivals where there is food being sold to check out the different setups. We have narrowed it down to using a 10x10 popup with sides, tables inside ect. A few of the vendors were nice enough to talk to us about "things". I noticed a lot of them seemingly did not have the required 4 sinks for cleaning. So I ask where is your set up? They point to 4 covered buckets of water and say that’s it and its legal. They just heat up hot water as they need it. There has got to be a better way to do this with out breaking the bank and be portable. Any comments on this? Thanks

    You need to talk to the Health Department for the city/cities and/or county/counties in which you will want to set up.  They have the final say-so, and if you do several festivals in different areas, the requirements for each area may be totally different from another.  If you meet the requirements of the most stringent HD of the locations you are interested in, you probably will not have many problems with the others.

        All my HD requires (MI) are like what you saw, three tub filled with water. You can grab one of the camping hot water heaters for around $100 for the hot water. I bought totes at Lowes for around $7 each. Just need water and a table to set them up on. All legal.

          Those big 5 gallon water coolers will hold water hot for many hours. That is what we use on our cart (with a 12VDC water pump). We use tap water for our hot water but my water heater is set pretty high.

            Ok. So how do you dispose of the waste water. At the end of the day or end of event? Just dump it in the gutter, on the grass or ??? LoL Sorry Im new and this part of festivle life has me stumped. Thanks

              In MI I need to dispose of my waste (gray) water and ice melt, which is also considered "hazardous" liquid, in an approved dumping or city sewer facility. Here, by law, one cannot simply dump the dishwater and ice melt in ones garden or kitchen sink, the plants and grass love the stuff, and I don't get why my septic system cannot handle what I already wash down my own drain from dinner. I normally have around eight gallons of total waste water when I am done for the day if that. You should see my wife's garden. ;)
               
              Not saying I dump the water in the garden, but she does have some beautiful flowers.

                  We dump our waste water into the campground sewer system. Both in TX and here in NM, that is an approved way of disposing of our water. we just dump into the sewer connection at our site. Most commercial campgrounds should be allowed to handle your waste water. Also campgrounds usually have a Dump Station, as do a lot of truck stops (we have dumped our RV at Flying J's before but I've heard they started charging for the dump although they didn't charge us... could be because we ate supper there, spent the night in the parking lot, ate breakfast there, filled up 2 Jeep grand Cherokees and the Class C along with dumping the RV waste tanks). Dump fees range from FREE to $15... I've never paid to dump.
