From Portland, OR's paper: “The first thing you have to do is run away from the hotel as soon as possible,” he says. “And then run away from other tourists and whatever restaurant the hotel concierge recommends. Instead, walk around until you find a place crowded with locals, and then knock ’em back shot for shot. There’s no better way to get to know a town.” He's the bomb! Isn't that a pure example of Roadfood?

Love his stuff!--great story of burning his hand and ask for a band aid early in his career---pre"career" really--the guy he asks shows him his blisterred cut calloused hands and then picks up a hot pan with them and pretty much calls him a whimp, you should all read "Kitchen Confidential"!! But then---you may never want to sit too close to prof kithen staffers again!!

He was in Atlanta recently and the interviewer thought they would meet at a fancy bistro, HA! Anthony said to meet him a a dive where he could smoke and drink some beer instead.

I wish we knew if his series "A Cook's Tour" that aired on Food Channel will be made into a DVD. Very entertaining fellow.

The best meal my husband and I had during a stay in San Diego was at a Mexican food place recommeded to us by a hotel maintenece worker. First he told us we should ask the concierge where to go, but we insisted we wanted to know where HE liked to go. He finally told us, but warned us it might be a little bit of a dive. It was, the food was out of this world and we felt right at home. I wish I could remember the name of it! I do remember I had ceviche and chicken enchiladas though. My favorite moment from the Bourdain show was when he was eating an iguana, prepared for him by his guides sister (wife?). He said something like the taste made him wantto stick his head in a bucket of lye til his eyeballs bled. That expression describes exactly what javelina tastes like to me!

Bourdain is a hoot. Believe it or not......99% of what he wrote in Kitchen Confidential......is.......TRUE. Scary, huh??

I read it a couple of years ago, and it actually made me a better "customer". When you read this book and realize what true skills it takes to serve a meal to a table of people who all want different food, it's amazing to me that I can EVER get a great meal. It gave me genuine respect for the "kitchen", and I'm so much more patient now. I really miss his show.

I'm convinced I worked at one of the restaurant he describes; I only know I didn't because I never worked on the coast. Don't read any of his non-food books, though. It took me four tries to get through gone bamboo.
