Go up to your ceiling and straight out the front or back of the building if your zoning department will allow it.

Is there a way to have a pizza oven with no hood? Is that even possible?

I have seen one that had a hood built into itbut is that the only option?

If you are looking to vent hot air, that is one thing. But if you are talking about a full blown commercial exhaust hood with a fire suppression system as usually seen over a stove, then in some states they are not required, as pizza ovens, or all ovens, are considered a closed, contained, unit and do not generate what are called "grease laden vapors". (even a conveyer oven that IS open on both ends...)

I know that in Alabama & Georgia you do not have to have a hood if you run a single "Impinger" style conveyor oven but it does need to be positioned near a sprinkler head.

Around here I've seen the electric conveyors hoodless, but gas ones with hoods and fire suppresion. Personally, I'd want a hood to suck out the excess heat, especially in the summer months.
