Not Tonight - 56 K WARNING Mon, 12/25/06 1:31 PM (permalink)
Tonight will be the traditional Ham & Turkey; these are for next week. The last time I tried an injected rack of BB’s they were terrible, I’m trying a different brand. The little butt is for slicing.

The ribs have my simple rub of Kosher Salt, Garlic Salt, and Ground Black Pepper. The butt has a rub with some sugar and a little of mine over it.





Into the smoker.








It’s warm but overcast, supposed to storm later.








Careful, you might be next.





Storms came through; understand that a Tornado touched down in Daytona Beach.











Ribs look good; toothpick slides in and out nice & easy. Butt has a ways to go yet.











Very moist, pretty good but not as good as Sam’s.



Butts ready. I usually do butts in the Smokin Tex if I’m going to pull them; for slicing I use the Traeger.








Into the refrigerator with the ribs for next week.

    Save your corn cobs for the next rainy day event! I mauled down more cob smoked ham today then whats legal... But them pics are lookin good my freind. As Floyd once said, "Wish I was There"... Oh, what are them cords hanging out of the bottom of your smoker? Curious electronic fanatics want to know..

      Looks like your day was like mine...
      Rainy, rainy, rainy, but no thunder or lightening here.

      And...........You leave that cattle egret alone.
      He has more feathers than meat..
      Of course you can use his legs as a toothpick afterwards to "pluck" his feathers out of your teeth!

        Despite the fact that I am stuffed to the gills from Christmas feasting,I do believe I could find some room for those ribs,and a bit of the butt,too!!Marvelous as usual,John!!!

          Hi Uncle Vic. The Traeger comes with an analog controller for the auger that feeds wood pellets to the fire chamber. I replaced it with a digital unit to keep the temperature flucuations to a minimum. Guess I should stuff those wires back up where they belong.

          Always a little room for some BBQ Ann.

              We got the blunt end of that storm over in my area, John. Lasted through early this AM. Nice pics. Please point out your house so I will know where to pitch my tent. Better yet. Give Google Earth ".kmz"'s.

                    Great pics John as usual. We only got a bit of the rain but the western part of Jacksonville got hit pretty good. Cajun, they feel like golfballs to, if your crazy enough to go out in them!
