An friend of mine(way German) does this in a kettle but says it's for a roaster. He scaled it down to 4 cups and say's you might have to adjust for taste.
4 cups Nuts
1 Egg White (For roaster, don't try in kettle. He say's it can get ugly!)
3/4 cup Sugar
1 tsp. Cinnamon
1/2 tsp. each Allspice and Ginger powder
A good dash of Nutmeg
3/4 tsp. Salt (his best guest for table salt, he uses Kosher and estimates 1 Tbls. Kosher
Whip egg white and throw nuts in. Combine dry ingredients in a large enough bowl. Strain excess egg whites. Toss nuts in dry ingredience.
Graded Citrus zest is optional. About a Tbls. very fine. He does it for the holiday season. If used, blend into egg white or you can dry them and add to dry mixture
This guy does quantity but thinks this should be there depending on how spicy you like them. He does a honey thing where he heats the honey,strains and tosses with spice mix without all the sugar(just a couple of pinches he say's). Hope this helps! Let us know how they turn out
