I submit that the things they can do with a beef brisket are on the same level as any in TX. Both are the best examples of their craft.

It's my favorite of the cured smoke meat sandwiches. However, this being an ode to Katz's, I must say that I miss the hell out of the whiff you get when walking in. It's more than about the meat.
