 Offset cooker Pizza

With summer coming up our stove goes off til fall. I've been thinking about trying to cook pizza in my New Braunfels offset smoker. Sort of like a woodfire oven right? And a great way to use up garden tomatos, basil etc. Plus my SO's daughter is in culinary school and has developed a love for making mozzarella, damn her.

Anybody tried this, or think of any reason why it wouldn't work? I've baked cornbread, bread pudding, meatloaf, hams, etc. on my Weber grill, but figured the size of the smoker would better accomodate a pizza stone.

      Doing a lot of chili the next few w/e's but I'll get some pics up as soon as I try it out.

        I have a CharGriller Super-Pro, and have made pizza several times that turns out great. Don't use a pizza stone- put the dough directly on the grate over medium to high direct heat. Don't use the SFB, but instead put the charcoal (I use lump only) in the charcoal tray in the main grilling area. I make my own dough, and use about 6 ounces for each crust. After you roll out the dough for each crust, brush olive oil on one side, place that side on a piece of parchment paper, brush the other side of the dough with olive oil, and cover with another piece of pp. When you are ready to put the dough on the grate, simply remove the top piece of pp, flip the dough onto the grates, and remove the other piece of pp. Grill for app 2-3 minutes, until dough starts to brown on the bottom. Remove to working area, grilled side up, and place sauce and toppings on pizza. Return to grill, over direct heat until bottom is browned slightly. Move away from the coals, close the lid, and cook until cheese melts. A big hit here at our house is a "sauce" made by mixing (Amounts will vary, depending on your taste) garlic powder, kosher salt, freshly ground black peppercorns, rosemary, thyme, marjoram, and basil into extra virgin olive oil. Brush this on the side of the pizza you grill first. Add sliced tomatoes, black olives, and mozzarella.
