    since you are in TN only polish sausage(ph value) can be served off cart. at least that was the way HD lets me get by with. that is why i went with the cart i did. flat top to grill onions and peppers with the sausage. people turn around in their cars for the aroma just wondering what i'm cooking.

      I had the health dept look at my menu and they said it was fine. Grilled Corn and Itailian sausage was on it. However they haven't been very helpful so I am going down there soon.

        there you go. shows that where ever you are each inspector has a little differant interpertation of the rules. down here, lawrenceburg, cannot do what they call hazardous stuff since am just a cart. now if i was enclosed that is another whole ball game. but the sausages with grilled peppers and onions,steamed buns, are my top sellers. the HD has never seen my menu at all, they just care about my temps. and hand sanitation.

          Hey guys Colorado Springs is much looser, I serve BBQ POrk & Beef sandwiches with onions and peppers and I can boil my brats in beer. I also sell baby back ribs based with jack daniels sauce. I just have to have a good cover and face shiield, and keep my meats really cold, I have my soda in a separate container to give my meat and topping very cold.
          Curbside Understands the impprtance of onions and peppers and sausage (smell a vision) it works so good
