Opening festival food business - help!

Hello all. New to the forum.

My business partner and I are considering opening a business that sells food at festivals, carnivals, etc. We have done a considerable amount of research, but I figured I'd check to see what kind of advice you guys would have for us. Anyone have some tips?

We would like to sell fried twinkies, oreos, snickers, etc. There have been alot of people locally talking about it, but as of yet, there are few vendors in our area doing it.

Me and two friends have recently become interested in starting a food stand at festivals throughout the summer.  I know that you were looking into it a while back but did you happen to succeed? 

If so, what were the steps you had to take as far as getting all the paper work together to make it possible?

If you could point me in the right direction, that would be a big help.
