 Original Old Time Chili

A long time ago my aunt gave me her chili recipe. When her amd my uncle first got married he wanted some chili but she did not know how to make it. She went to the little "city" cafe and asked them for their recipe. When she got home the recipe was for something like 10 gallons of chili. She started cutting the recipe back to make the right ammount for a family. It is good, old time chili. We still call it Pybas Horne chili out of respect to the owners of the little cafe that had the recipe.

        It is pretty simple.
        I usually cut up a roast into small cubes browned in flower salt and pepper. Add a good bit of chili powder about half as much paprika a little comino and simmer in about 4 cups of water. Put in a little garlic and you should be ready to go in a couple of hours.
        It is best the next day.

          Excellent!  No tomatoes, no beans, no weird stuff.  You my friend are onthe trail of authentic chili there...
