By - duc nhom Shredding the potatoes and onions in a food processor as opposed to a box grater makes this recipe faster. Adjudicator No pics? There's a picture at the URL's site, but I cannot imagine eating a latke made using the recipe provided.

There is always one thing in some recipes that cause me to go WTF? In this case, it is the addition of two pieces of whole wheat matzos. I don't have matzos hanging around the house, I am not going to buy a box for two pieces and if I did buy a box, do I have to really have the whole wheat variety. How many saltines equals a matzo..? mark

How many saltines equals a matzo..? mark Since the recipe called for 2 pieces 6" by 6" matzo (a total of 72 square inches of matzo), and saltines are about 2" by 2" (4 square inches each), it should take about 18 saltines to equal the 2 matzos. Unless you are a "salter", I would also reduce or possibly eliminate the teaspoon of salt in the recipe, since saltines generally have more salt than matzos.

The recipe from Eating Well writes that first you pan fry them in a little oil in a skillet then finish them off in a hot oven. I doubt you can make these oven crispy totally in the oven.
