Oyster Shooters, Who has the best? Wed, 03/4/09 5:09 PM (permalink)
The best Oyster Shooter I ever had was years ago at the Grand Casino in the Biloxi / Gulfport region of Louisiana. It had some kind of cream sauce, served in a glass with the raw oyster, and some Vodka I think? Shoot, it WAS years ago. Anyway, it was great and I had??? 5 at least. :~)

Where have you had great Oyster Shooter? And how was it made?

    Calico Jacks here in Gainesville.  Oyster, Absolute and a dab of cocktail sauce.  Makes my stomach growl thinking about.

      Actually, in my marginally wiser old age, I think the Oyster Shooter is an awful thing to do to an oyster, and, with the exception of vodka to which nothing too awful can be done, I think we are better off to have a nice shot of rum or gin or whatever and have our oysters on the side.

        Good catch on the geography.....reminds me of being in the FloraBama on the state line....my sentiments exactly on the ruination of a good oyster. Give me a cold Dixie on the side.

          John, yogurt... that sure might have been it. Thanks! And lol... yep Mississippi! I was havin a good time! Hey, I had been through Louisiana a few miles earlier. :~)

          Don't get me wrong... I love a plain oyster.

          Russ's shooter is almost like a plain oyster. Sometimes simplicity is best!

            SHEM CREEK BAR AND GRILL in Mt. Pleasant, South Carolina. Great bar, awsome spot for a sunset.......and of course....oyster shooters! I only regret that I go when friends come from out of town.

                 I'm not a big fan of drowning the oysters in sauce, so I also like them with just a little vodka and a dot of sauce.

                    Oysters raw in the shell slide down the throat with a great salty-brine taste...Chewing would interupt the process and the concentration !! I love them raw with a bit of lemon and tabasco. Shooters are OK, but I prefer the oysters Naked, with some cold beer on the side.

                      Mar, I like to squeeze the raw ones in my mouth a bit before they go sliding down. Not sure haw to eat a steamed oyster?

                      Does anyone serve a tequila oyster shooter?

                          For me, eating raw oysters depends on the size. I dip all of them in a horseradish laden cocktail sauce to coat it, place it on a Saltine. If it's a large one I knaw on it a little bit and if it's a little one I let 'er slide!!! 
                          As far as shooters go, Oyster in a shot glass, cover with horseradish laden cocktail sauce, a generous squeeze of fresh lemon juice and down the hatch! COLD BEER Chaser!

                            I still eat them raw and will morning, noon or night, ice cold, so cold they almost hurt your teeth. I know there are "hidden" bacteria out there but I've been lucky so far.  When you get a "bad" one hot or cold, you'll know it!

                              You surely do not just swallow them whole or "let 'em slide down". You have to caress them slightly with your molars. That way you release the flavors of the sea, the briny freshness, and other flavors soon emerge. Hard to describe. You must also slurp directly from the shell to enjoy the oyster liquor within. Don't cover up the flavor with huge dollops of cocktail sauce, Tabasco, etc. Maybe just a touch of lemon juice or some chilled red wine vinegar....a touch. No offense, but forget the crackers. Once you enjoy them this way you will never go back.

                                Mar, good question! Raw oysters are actually live oysters. Once they die they are no good to eat. It would be interesting to know the odds of getting sick from eating a raw oyster. It is a risk, at this point, that us raw oyster lovers are willing to take.

                                I like canned boiled oysters also. And canned smoked oysters. Hmmm, smoked oyster shooter??? Maybe w/ some bourbon? Hey I'll try just about anything. :~)

                                I also love raw eggs. I like a sprinkle of hot sauce with those. I now only eat free range fresh outa the nest. I have not tried the... what do they call those treated eggs? Oh, homagenized (spelling?). They are supposed to be safe to eat, and use, raw.

                                  I still like a lite splash of hot sauce w/ mine.

                                  I more like squeeze them w/ my tong... against the roof of my mouth. That way some of the inner juice is released. MMMM!

                                    Like everything else on here, opinions are like rear ends, everyone has them. I lived in Pensacola FL for 16 years and ate oysters several times a week in season, (And sometimes out of season) every way imaginable including naked, steamed, broiled, stewed, fried, poached, grilled, sauteed, baked, roasted, skewered and tattooed! (I sound like Bubba Gump!) The way I described was related to the specific question asked by the beautiful young lady from Marina Del Rey.
                                    If I'm not mistaken, I don't believe they harvest Oysters in Wisconsin, do they??

                                      Only the Rocky Mountain variety. I must say that having lived in 24 states before I was 40 years old gave me a lot of exposure to oysters throughout the US. I lived on both the coast of Oregon and Washington for a long time and sampled some of the best Pacific varieties. I also used to work in New Orleans at the Acme and had some great tasting experiences there. While living in Apalachicola I worked on several boats in the oyster fleet out of there. I also lived in Montauk, NY for a time and sampled many a Blue Point while there. Last, but not least, I tended bar at the Grand Central for 2 years and added a few more varieties to my resume.                                           Sloshing an Oyster around in your mouth is like straining Jello thru your teeth.... it's fun, but it Ain't Couth!!! 
                                           I do 'squeeze them a bit as they go down, to get the lemon, Tabasco and Oyster Juices mixed together a bit.

                                          Now Broiled and the various Oysters cooked (Rockefeller, etc) need a bit of chewing or other mouth-work to make them go down easy. The best of all are the icy cold, raw, freshly shucked still attached to the half-shell!

                                              I worked in NYC for 6 years and frequented the Oyster Bar at GCS. Would sit at the counter and watch the making of the Stew. Fantastic. The PNW had great oysters and they tended to be smaller than the Gulf Coast Oysters and yes, those you just let them slide. How did you eat the the various varieties of Long Island Clams?? 
                                              Glad you asked....I actually like clams more than oysters....like you described your fondness for oysters....every way possible. I love the steamed Manninose (piss) clams, also fried whole bellies, steamed Cherrystones and Little Necks served with their cooking liquid and melted butter. A friend and I ate 2 gross (288) one night on a bet from his father. We then ate 2 good size Porterhouse steaks. I also love just raw Cherrystones and Little Necks. They have great flavor and you actually must chew them....at least I do. I apologize for sounding like some sort of an oyster snob....to each his own, but I've tried all the other ways, too.                                                   No shooters at GCS when I was there...(70's)....I love Rockefeller also. Have you tried Oysters Bienville? The ultimate appetizer would be a dozen of each. Of the thousands of raw oysters I have eaten, I only got sick once.....they were from Casamento's on Magazine in New Orleans. A fantastic place, but it only takes one. Not too taken by the boiled canned variety, but I love smoked and clams as well.

                                                    Now Clams are a whole different story when compared with Oysters. I really do prefer my Oysters raw on the half-shell, but give me Steamed Clams with some butter for dipping (available many places) or whole-belly fried Clams (only in New England!).

                                                    The current 'favorite' poll on the front page, about seafood, is a difficult choice for me. Oysters were my choice, but I love clams and even more Scallops ( the big ones),. Crab is good too, but I prefer it in dishes that I don't have to do the work of shelling. I'll pass on the Calamari and related squid items, as my experience with them has been 'not good' (Tough and chewy).

                                                    Here is a plate of Broiled Oysters from Wintzells that Janet and Pov Pete shared last year.  From the left - Oyster Sampler...four each of Monterey, Bienville, Rockefeller and Grilled - $17.99

                                                          Here's a simple delicious mignonette sauce to try on your oysters on the half shell:  1 oz. red wine vinegar
                                                                          1 finely chopped shallot ( about 2 Tblsp.)
                                                                          freshly ground white or black pepper to taste.
                                                                          (salt to taste, if you want)
                                                                           Mix ingredients together and let stand while to blend the      
                                                                           flavors. Spoon a 1/8 tsp. or so, on each oyster and serve.

                                                              My delicate little wife snarled like a Lioness with cubs everytime Pov pete reached for another Oyster off the Sampler !! (AND THEY ARE FRIENDS--NORMALLY!)
                                                             I had ordered the Fried Oyster/Shrimp Dinner prior to my second dozen of the raw Oysters...were I to do the evening over I would have skipped the fried stuff and just kept downing the brews and Raw Oysters. As it is I quit after four dozen..Had I not had the fried stuff in front of me I would have done a gross of those beauties in their shells...and shared the beers with others.

                                                            A second good place we found  (again with Poverty Pete) was the Moon River Brew Pub in Savannah,GA. if I recall they served a Sampler of three types (total a dozen for $9.99). Very Good, But Wintzells was the best I have ever had!

                                                            Another question raised was about using Bourbon in a Shooter. I would think the strong flavor of the Bourbon would really "drown" the delicate flavor of the Oyster much more than a lighter Booze like Vodka or Schnapps might.
