If all you have is a gas grill (nothing wrong with that) then that's the way to go. PS....Aloha from the Kona Coast.

Without a grill available, I would do a combo pan sear and finish off in the oven broiler.

Sprinkle on a moderate amount of some coarsely ground black peppercorns, meat tenderizer (the kroger brand I've got now is essentially Salt and enzyme pwd) ... let the steak sit in the icebox for 30 minutes or so. Set the gas grill to "Hell" ... brush and oil the grates ... pre-heat to extremely hot. ... Put on the steaks.

I enjoyed a T-bone just last night. A little kosher Salt, lots of fresh ground pepper, a light coating of EVOO and done in my trusty, (pre heated) 60 year old, (now, non-stick) cast iron pan. I love the crust!

Grill a tbone. On high, maybe 4 mins on each side then rest it 5. Medium rare to medium. Filet, I like pan-seared then finished in the oven. I've never tenderized or put in a freezer beforehand.

a nice seasoned gas grill sear side 1 flip finish on side 2 be carefull, a t bone grills FAST

I can't afford to waste a mound of charcoal on a steak thats gonna see three minutes on a grill so I fire up My cast iron pan and let it do its magic.Then in the oven for a quick warm up.

Paul I agree with you. Both variations are extremely tasty and for me it depends on my mood. I like the crust of a good hot cast iron pan sear and i like the char of the gas grill. for me sprinkled with cajun seasoning. hmmmmmmm Im thinking steak for dinner tomorrow
