    Nice smoke.
What do you use for your rub/seasoning?

Just the normal stuff, but go to www.DrofBBQ.com
and click on the BBQ link.
You'll find hundreds of links (all good) that will
offer Dry Rubs and information on smoking meat.

Or email me Jack@DrofBBQ.com and I'll send you my
collection, I think there are about 50.

That would make a good billboard pic, Jack. What are you using for a pit? I use an Ole Hickory for my brisket and butts, and a Cookshack 250 for my ribs and chicken.

I would love to find a store here in Dallas that sells those ribs. Any Dallas posters know where they can be found in Dallas?

I would love to give that rig a try! I use a Hondo New Braunfels (old thick steal type) which I love. But comparing a Klose to the Hondo is like comparing a Pinto to a Cadillac they both are going to get you to where you are going, only one in style.

I pay $2.78 per pound. So a slab runs $8.29. Half slab is $4.15.
I get $9.50 for half and $18.45 for a whole slab.

That's roughly what my costs are as well.

Dr of BBQ, I'm trying to locate this product. Checking the Farmland site, I see they list EXTRA-TENDER® PORK LOIN BACK RIBS. Is this the correct product?

                                Thanks in advance!

Ribs look like the ribs were rubbed with a tender quick. The bark on the outside would suggest that that is not smoke but nitrates.

Wrong but nice try Keith. I never use Tender Quick.
                                          50% t 60% of my customers don't even know what a smoke
ring is. So to induce one with TQ would be a waste

                                            Nice looking ribs Jack,
Do the Farmland ribs contain a solution? I haven't been up to the SuperWalmart in while...and the other grocery stores in the area don't carry that brand. I am trying not to buy meats or poultry that are injected with solutions (usually salty water to plump them up), and I know that Walmart and Sam's club both carry the Purdue Tender and Tasty line of chicken...rather than the more natural chicken.

                                            Thanks,

Dr. of BBQ, unless I'm wrong, the meaty back ribs in question are available through Farmland Foodservice, and not through retail outlets. Which makes sense, because this is the professional's forum and I'm a consumer. I hope I'm wrong, because I'd like to try them. Unfortunately, I haven't been able to reach a live person at Farmland to confirm this.

Linda,no they're not injected with any solution, and in answer to MellowRoast
I don't think your going to find them in a store, but I could e wrog. I have special ordered them through my regular food purveyor.

But I think you could do the same thing, and if they won't, find a friend that owns a restaurant and order a case through him or her. They come frozen so split a case (12 SLABS) with your friends or family. Or throw a party.

Check WalMart Supercenters. That's where I get mine in AZ

After calling around, I found them at a Walmart Neigborhood Market.

Just to clarify, I believe I cited the wrong product name earlier. Correct me if I'm wrong, Dr. of BBQ, but the product is FARMLAND MEATY® BACK RIBS, and is product #5 on this page:
