That would make a good billboard pic, Jack. What are you using for a pit? I use an Ole Hickory for my brisket and butts, and a Cookshack 250 for my ribs and chicken.

Ribs look like the ribs were rubbed with a tender quick. The bark on the outside would suggest that that is not smoke but nitrates. Keith

I never use Tender Quick. 50% t 60% of my customers don't even know what a smoke ring is. So to induce one with TQ would be a waste of time and money. Jack

Nice looking ribs Jack, Do the Farmland ribs contain a solution? I haven't been up to the SuperWalmart in while...and the other grocery stores in the area don't carry that brand. I am trying not to buy meats or poultry that are injected with solutions (usually salty water to plump them up), and I know that Walmart and Sam's club both carry the Purdue Tender and Tasty line of chicken...rather than the more natural chicken. Dr. of BBQ, unless I'm wrong, the meaty back ribs in question are available through Farmland Foodservice, and not through retail outlets. Which makes sense, because this is the professional's forum and I'm a consumer. I hope I'm wrong, because I'd like to try them. Unfortunately, I haven't been able to reach a live person at Farmland to confirm this.

Linda,no they're not injected with any solution, and in answer to MellowRoast I don't think your going to find them in a store, but I could e wrog. I have special ordered them through my regular food purveyor. But I think you could do the same thing, and if they won't, find a friend that owns a restaurant and order a case through him or her. They come frozen so split a case (12 SLABS) with your friends or family. Or throw a party. Jack
