Pigs in a blanket..

We used to have this recipe for "Pigs In A Blanket" and I'd like to find it again... I could probably just make up something.

It was based on the idea that when you order pancakes and bacon and sausage you'd always get syrup running off the pancakes onto the other stuff.

This was basically a large pancake with bacon and sausage cooked in a cast iron skillet in the oven.

    while growing up Mom made pigs in a blanket for dinner, but hers where hotdogs rolled in crescent dough. Your lost recipe sounds delish but I can't imagine how to make the batter stiff enough unless you were to use mini loaf pans or other type of form

    When we go to Santa Fe we stop at a place called "Over Easy" that makes p-in-b like you mentioned. Its on the kids menu. Basically a large pancake wrapped around a sausage and held together by a toothpick. Syrup in the side. My daughter loves it.

    As I am not a big egg eater, I usually opt for Pigs in a blanket if they are on the menu.
    That has to be my favorite breakfast meal.
    Pancakes, sausage links and grits...
    Either that or just rye toast instead of pancakes.
