Pimento Cheese Recipe

Reading this thread reminded me of a small local grocery store that used to be in our neighborhood. They made pimento cheese, pork breakfast sausage, and chili in house. Needless to say, the butcher section smelled terrific!
As a small child, I would stare into the butcher's case and marvel at the pimento cheese tray which had the fake green grass around it. Of course the sausage always drew the most attention since it was sculpted into the shape of a pig!
