Pizza Puttanesca

Today's picture on the home page shows a pizza with a delicious Italian sauce...Puttanesca...it can be made various ways,but always spicy and with anchovies. here is a video that shows the sauce being made,then being put on pasta. The sauce makes a wonderful spicy pizza. Look for one in your favorite Italian pizzareia!

    Anchovies can simply bee ground into the sauce> I'm not an anchovy person...but it is used in Caesar salad dressing and Worchestershire suace to name but two...and who notices the little buggers in those two...this sauce made from them is great..you don't have to layer more on the top of the pie as the photo shows!!

    My wife loved Worchestershire sauce when I added it into marinades and such then she found out about the anchovies and swears that she can taste taste them.....yeah right...If I remember right Worchestershire sauce also contains Juniper berries which is what Gin is made from so that cancels out the anchovies right?

    I'm sorry I missed the original picture of the puttanesca pizza. The video about making the sauce does NOT show the use of anchovies or even mention them as an option, as several comments on the "videojug" preentation memtion.

    Under another heading there is thread, "With out it it is not really chili," or some such. I would venture to say that without anchovies it ain't really putanesca or Caesar dressing for that matter, at least not a classic Caesar. Kind of as hoot, don't you think, "vigin puttnesca." Sometimes in restaurants I have said that I wanted to be sure and taste the anchovies in the Caesar dressing and they brought me an open full can of anchovies!

    I would comment that if you were to make a puttanesca pizza you probably would want to cut the anchovies into thin strips and soak some of the salt out and still use only a limited number as a topping.

    On the subject of puttanesca generally, to me the amazing thing is that I can find several competing brands of puttanesca sauce at the grocers. It really is a change from my childhood when only " plain" sauces, basically seasoned tomatoes were sold.

    The original photo of the pizza clearly showed the anchovies liberally placed on the pie as a topping!!! I guess,if they were still in the sauce,it would still be a true puttanesca pie!!!! Yes and a variety of sauces out there is a great improvement. We still prefer our homemade the best,however!!!

    Agree about the "home made." IMP one of the great scams that people preparing American meals have bought into is the idea of canned - or jarred - pasta sauces.

    I looooove anchovies, I think it is hilarious that most people say that they hate them, but then are chowing down on a caesar salad...
