Planning A Cinco De Mayo Meal

Happy Cinco De Mayo. We're going to have Fish Tacos with Baha Mahi Mahi......my wife and kids love making them, and I sure love eating them...anyone planning to celibrate todaywith Mexican food???

Cinco De Mayo is a big deal in Phoenix. Most Mexican restaurants will have parties in their parking lots. Cerveza, Tacos, Cerveza, Burritos, Cerveza, Enchaladas, Cerveza, Nachos, Cerveza, etc

I made my version of Mexican rice using chorizo, ground beef, sausage, vidalia onions, bell peppers, jalapeno peppers, and several spices.  I sauteed the veggies before adding to the rice and I browned all the meat before adding to the rice.  I added roasted red peppers and pimento peppers on top for color
 
I also made a Tres Leche cake that I frosted with some cream fluffy cheese frosting and added some sliced peaches and lime on top of the cake for color.

We celebrate Cinco de Mayo on May 6th (it's my wife's birthday).  We're getting take-out from Ernesto's Taco Shop.

I throw an annual party on the Saturday closest to Cinco de Mayo. The tradition started in 2003 at college. I'll be throwing The Siete Fiesta this Saturday, which is the 5th in a row at my current apt.

I'm getting Oaxacan Style Mexican catered from a small taqueria around the corner from me. I'm also making 5 Gallons of Lee Trevino Punch. It's like an Arnold Palmer only Mexican.... Get it?
