Four Thin Boneless Pork Chops
1/2 Green Pepper
1/2 Red Pepper
2/3 Cup Orange Juice
2/3 Cup BBQ Sauce
One TBS Dry Mustard
 
Pound pork chops nice and thin. Stuff with peppers then roll and pin with toothpicks. Remember those toothpicks are there, happy hour is no excuse. Brown pork chops (I used lard) then add mixed OJ, BBQ sauce, and dry mustard. Cover and simmer for 20-30 minutes. You pick the sides.

    i am making this for dinner tomorrow. Being that its Friday in Lent, I cannot have meat, but tomorrow, ohhhh yeah.

      This looks really good!  I'm trying to lose a few (!!!) pounds and this looks like the right idea.  I might even use the chicken breasts - yuck - my wife bought. 
       
      Wonder if I could use other veggies - greens/squash/etc..?

        Boneless chicken breasts pounded nice and thin should be fine. Use whatever strikes your fancy for ingredients; it’s the OJ, BBQ sauce, and Dry Mustard that makes it work. I’m thinking about adding cheese & scallions next time.
