This looks really good! I'm trying to lose a few (!!!) pounds and this looks like the right idea. I might even use the chicken breasts - yuck - my wife bought. Wonder if I could use other veggies - greens/squash/etc..? cy

Boneless chicken breasts pounded nice and thin should be fine. Use whatever strikes your fancy for ingredients; it’s the OJ, BBQ sauce, and Dry Mustard that makes it work. I’m thinking about adding cheese & scallions next time.
