Portabella Burger Recipe

Ingredients (2 burgers)
2 portabella caps 1 clove garlic, minced 1/4 cup balsamic vinegar 1 tablespoon olive oil 1 tablespoon dried oregano handful of basil, roughly chopped 1 small zucchini (for topping)
Prep mushroom caps: remove stems then mix olive oil, balsamic vinegar, basil and garlic. Brush over caps then place in refrigerator to ‘marinate’ ~20-30 minutes. While mushrooms are marinating, prep zucchini by slicing into very thin slices and brushing with olive oil. After mushrooms have marinated for a bit, place them on the bottom grate of the grill along with zucchini. Cook mushrooms for ~3-4 minutes, rotate 90 degrees then cook 3-4 more minutes. Flip and repeat. Cook zucchini for 6-8 minutes on each side. Total cooking times: mushrooms – 12-15 minutes; zucchini – 12-15 minutes. Plate up: serve portabella caps on your favorite bun with fresh sliced tomato, kale and folded zucchini.

        I love Portabella "Burgers". Haven't attempted at making my own at home, but there's a nice Mom and Pop diner within walking distance of my apartment that serves one. Next time I dine there, I'll take a photo of it.

            A portobello burger is a burger of Champignons.

            Especially with Swiss cheese & avocado.

              I grilled some last week.  Tossed them with oil and barbecue rub, started them gills down, flipped them and added some barbecue sauce and shredded smoked Gouda, and let them go until the cheese was thoroughly melted.

                I used to make them for Daughter No. 1 when she was in her vegetarian stage of life. I'd clean out the gills after trimming the stems, then I'd oil them up, add a little salt and pepper and grill them along with the regular burgers. After turning I'd top the mushroom with some goat cheese and let it melt a bit into the "meat."

                  Several of you have mentioned cleaning out the gills.  Why? Dirt?  I have done them a few time w/o doing that and find them very tasty. Of course, it may help that I get them from a Farmers Market in the next town over that is known as the mushroom Capital of the US (if not the world!)
                  I have done them on a grill, but also in a pan that is then in a 350 oven for a bit.  Start Gill side down, flip them, add a dash of Balsamic vinegar, Worcestershire and some garlic.  Top them with cheese before they go in the oven or for the last 2-3 mins on the Grill.  Mine gets a slice of onion added often.and maybe some BBQ, but the rest of the folks prefer w/o

                    I don't mind the gills but some people don't care for the texture.  Personally, I think they're great for holding marinades, seasonings, etc.

                      2 parts chopped portabella, 1 part cooked white rice, 1 part diced firm tofu, 1 part fine bread crumbs. Season with a little Hoisin Sauce and Old Bay to taste. Prepare Patties and refrigerate over night wrapped in plastic wrap. If mixture is a little dry add a little oil prior to making patties. Grill as normal....Russ

                        Not as a burger, but as an appetizer, I grill the portabellas (gills in) then stuff with gorgonzola, run them under the broiler and top with grilled tomato coulis.

                          Here's a wonderful Roadfood (what's for lunch) portobello 'Shroom Burger from the original Shake Shack located in Madison Square Park NYC...

                          Crisp-fried portobello mushroom filled with melted muenster and cheddar cheeses... topped with lettuce (for my squirrel friends) tomato minus the ShackSauce add ShackMeister Ale-marinated shallots that are on the menu topping a Shake Shack hot dog.

                          Jelly donut concrete for good measure...

                            Momma Mia! Looks very Yummy indeed. Did you say that whats looks like to be a Batter Fried Portobello Mushroom is actually stuffed with Cheeses?
