 Potato Bacon Soup

Potato Bacon Soup Fri, 02/23/07 3:59 PM (permalink)
As I type this post, there is a pot of Potato Bacon Soup bubbling on the stove. My recipe;


1/2 lb thick sliced bacon, diced fine
2 medium onions, rough chopped
8 medium potatoes, rough chopped
4 cups homemade chicken stock
1 pint half and half
salt and pepper to taste
3-4 sprigs fresh thyme
2 bay leaves
dash of Old Bay Seasoning

Dice the bacon and cook in a large, heavy bottomed pot. With a slotted spoon, remove the bacon when just crisp. Leave the fat from the bacon in the pot and add the onions. Sweat until translucent and then add the potatoes, chicken stock, fresh thyme, bay leaves, S&P and Old Bay. Bring this all to a boil and then reduce to a simmer for 1-2 hours. Remove the stems from the thyme and the bay leaves and let cool for a while. Take half of the mixture and puree it in a blender and add the 1/2 and 1/2. mix all into the pot and re-heat. Garnish with the bacon at service!!! Eat and enjoy!!!

          I'm going to have to try that. I just happen to have a very nice slab of peppered bacon.

            We eat this often. A suggestion. Add 1/2 sm. can of chopped green chiles when the broth is added. Add the other 1/2 near the end.

              Sounds good! I usually make my green Chili with potatoes so this is a new twist.

                Your note to let the soup cool before blending is a good one and should be emphasized. Blending hot soup usually leads to a geyser of hot soup erupting from the blender, usually scalding the operator.

                  I have had bad experiences with hot food and processors! I was a professional chef for 20+ years. Hope you all enjoy the recipe, and feel free to post any other recipes for potato soup here.

                        We could discuss green chile stew if you wish. We go heavy on potatoes and a bit lighter on the meat than most folks. We push up the seasonings and cook slowly and patiently.

                            Personally, I like more Pork and only enough potatoes to thicken the stew. I don't like the way that roux breaks down after re-heating.

                              Yes M'Glory........ I'd be pleased to share my green chile stew recipe. B 65 makes a good point about posting it on the Chili page. I'll do a little research.                                 My recipe is very similar - I saute a little finely chopped celery with the onions. I also use a potato masher instead of a blender because I like it a little chunky. I don't put old bay in it either but I think that sounds interesting and definately will try it! Thanks for the recipe!

                                    I checked for green chile stew on the Chili thread, didn't find anything. Granted, I'm not the best when it comes to locating previous topics. I'll wait sometime awaiting hearing from you before I move forward. My inclination is to begin a new topic "green chile stew" on the Chili page. Along with M'Glory, I'd enjoy hearing about other folks recipes.

                                      Thank you for your response rouxdog.

                                      I would be more than glad to share my "recipe", but most of the time I kind of wing it. However my soup is very much the same as b65, except I add celery, if I have it, and had not thought to season with thyme.....it will go in my next batch. Kids are grown and gone so I make about 4 potatoes worth.

                                      I had not thought to add green chiles, either, which is kind of a surprise, since I love them. Thanks for the inspiration.

                                        M'glory, we're empty nesters also. Tough to cut down on cooking amounts. I am a "wing it" also.....
                                        Before posting my recipe, I need to make a few notes. Recipes, ah, the're suggestions to me. Can't get to it today, maybe not tomorrow, current ranching issues are on the front burner. I will do it.                                                           i love potato, there's this potato soup recipe that i've found from http://www.imsickofbeingfat.com/forum/5379-potato-soup.html . here's the recipe :

                                                          Recipe Serving
                                                          4 Servings

                                                          Recipe Ingredients

                                                          * 3 Potatoes peeled
                                                          * 1 qt Milk
                                                          * 2 Slices onion
                                                          * 4 tb Butter
                                                          * 2 tb Flour
                                                          * 1 ts Salt
                                                          * 1/4 ts Celery salt
                                                          * 1/8 ts Pepper
                                                          * 1 pn Pinch cayanne pepper
                                                          * 1 tb Chopped parsley


                                                          Recipe Method
                                                          Cook potatoes in boiling salted water until soft.
                                                          Drain and push through strainer or blend until fine.
                                                          Scald milk with the onion then remove onion and add the milk to the potatoes slowly.
                                                          In a large pot melt the butter and add next five ingredients.
                                                          Stir in the potato mixture and simmer a few minutes, then add parsley.
                                                          Makes 4 or 5 cups.

                                                            I second the cornbread. I make a potato soup very similiar to this but usually drop some ceddar cheese in there too. It might not be called potato soup after that but it's good.
