Potatoes on Biscuit

While in West Virginia I noticed that the breakfast places had your typical ham, egg and cheese and sausage and egg biscuits with an option of adding potatoes to the biscuit combo? Has anyone ever tried this? Is this strictly a West Virginia offering?
I had an excellent fritatta at the Cathedral Cafe in Fayetteville, WV with eggs, asiago cheese, onions, artichokes and roasted red peppers. It is great spot for anyone in the area.
