Practical tips for a hot dog cart

Just bought my first cart and am ready to open up. I am sure i will learn as I go but what are some practical tips? For instance how long can I leave the dog in the steamer/boiler? If customers want them grilled should i use high heat for quick turnover or low heat? Can I stream the buns while still in the bag?
