Mamaw Smith does several things with her chili's and peppers.

With bell peppers and jalapenos she chops them with onions and freezes them

Jalapenos are sometimes strung and allowed to dry. How long they are good for beats me but I have seen Mamaw Smith use them almost a year later.

Jalapenos and bell peppers and onions are used for a relish.

I guess you could freeze or dry most any pepper. I have seen displays of beautiful peppers in Hispanic stores that were dried.
