So here’s a question for the canning pros out there.. When you go to the store you spend a couple bucks on a jar of pickle relish. Yet I can get one of these gallon size containers of the same relish for around 5 bucks. Well, being single, there’s no way I’ll go thru an entire gallon of this stuff, at least before it spoils. Is it possible to put the extra in canning jars and re-process? If so, is there anything special that would need to be done? Thanks..

Actually, if you keep it refrigerated, it IS pickled, so it shouldn't go bad. I only say this because we made the mistake of buying one of those, and I swear, it lasted almost a year. We've not made that mistake again. We also had the idea of putting it in canning jars but never got around to it. It just hung out in the back of the fridge and got hauled out a few times a week. The worst part was getting it in and out of the fridge. They should put handles on those gallon jars!

I would just do the simple water bath canning method, definitely not the pressure cooker method.

Just a thought. You might want to try just one jar as a test beings you are going to end up with twice cooked relish and would hate to see you end up with a bunch of green mush.

Uncle Vic, your pickle relish will not spoil. It's like a giant jar of pickles. Won't go bad. You do not need to re-package it! But DO keep it in the fridge!

Thanks... Was trying to figure out how to save some space in the fridge... I dont eat all that much relish, just like a plain dog (one without chili) once in awhile with the traditional toppings.. Was just looking at long term savings..
