I'm waiting for you to send one of your graduates to my neck of the woods, North Jersey. We have many succesful hot dog joints, but none selling an authentic Chicago style hot dog. We did have one a few years ago that did well, but the owner had to close for other reasons. I had so many dogs there that I aquired a taste for the Chicago dog and the Vienna beef frank. I usually have just mustard on my dogs, but the ingredients on the dogs (minus the onions) blended together well and the Vienna frank is a perfect choice for this style of dog. A spicier dog would throw everything out of balance while a milder dog wouldn't be able to stand up to the other ingredients.
I see that Chicago has been introduced to the Detroit Coney. Similar to what we call a Texas Weiner in Jersey. Will probably be an aquired taste to Chicagoans.
Send us a Chicago style dog joint and we'll send you a Texas Weiner restaurant. And I'll try to convince Jimmy Buff to open one of his restaurants selling Italian Hot Dogs.
