Question: Funnel Cake Batter

Hello everybody!
I'm new member and I have a question about funnel cake.
How long I can keep funnel cake batter on room temperature on slow days?

    Depends on the temperature. also if your using a mix or making your own batter with eggs.

    I see you are in Florida.  Does the "room temperature" include air conditioning
    Like holdem asked, are you using fresh eggs to make the batter?

    I saw the thread but I think it said funnel cake butter at first...and was eager to find out all about it.

    sysco or us foods reps sell batter mix with dried eggs and no worries but keep the batter bucket (5 gal) in a cooler w/ ice anyway. ive seen this batter mixed in white food safe buckets with an emersion blender OR a 19v battery drill with a mixing bit that looks like a paint stirrer.
    volunteer at an event OR go hang out at a fair or festival and watch and ask questions. everyone loves free and eager/cheerful labor.
    now,  go get em!!!!
