Quick question for restaurant owners

Quick question, would truly appreciate your insight. If you had to guess, for the whole US restaurant (foodservice) industry, in average, what % of all restaurant sales are from food (vs. beverages)? And specifically for Sushi restaurants?

    When I owned my Thai Restaurant we were averaging 80% food 20% per check
