I worked at several Pioneer Chicken Stores as an assistant manager in the early 70's. Great chicken! My employer owned three stores. As I recall, the recipe was delivered pre-made and the chicken was cooked in a large block of lard, yes lard at 350 degrees. It was mixed with water, then dipped, allowing the batter to drain off piece of chicken alittle then added to hot oil, and cooked for fifteen minutes. I have yet to try and duplicate it, but the closes I imagine that comes to it would be the Dixie Brand of seasoning. If I do come up with the consistency, texture and flavor, I will surely post it. If the other stores are surviving, and if there is no corporate office, then I must assume that a restaurant food supplier provides them with the pre-made batter. If someone were diligent, they might find the distributor who supplys the few Pioneer Chicken Restaurant that exist.
