Now that is a good looking que sandwich. Reminds me a lot of the sandwhiches I get from Gibsons or Greenbrier's.

    I went there a couple of years ago and it defnitely lived up to its reputation. Maybe the most flavorful pork I have ever eaten. Great smoke flavor, just a hint of sauce. No need to add any from the bottles on the table. To be honest though, I am not a big fan of the cracklins that they chop back into the meat. Some of it is good but some of it is beyond crunchy. Some of them are so hard and big that I had trouble chewing them. Most of it is not like that but a few pieces I found to be unpleasant. It didn't stop me from eating every bite of the large plate I got (and this was after a full lunch at Bum's BBQ).

    I am returning to North Carolina for the first time since 2006 this summer and I think I am going to make sure we stop ther again.

      Best Eastern I've ever had. The crispy skin bits make it for me, they're what sets the Skylight apart from the rest - including Wilber's.

        Minor suggestion, somewhat topical - when starting a new thread about "today's restaurant", realize that today becomes yesterday in 24 hours and then becomes the day before yesterday and etc etc etc....

        Label the topic with the date, ie something like

        Today's Restaurant (2/15/2008)

        or otherwise folks will get confused when what you talk about in the thread-opening post doesn't match the restaurant of the day on any day thereafter.

        That said -- I am not a mod or admin here, this is just a suggestion to make threads like this (whch appear to be growing in popularity) easier to follow

            Reminds me of the great "pig sandwich" at the Hard Rock cafes

                I just ate at Skylight Inn a few weeks ago and it is spectacularly good. It has to be on the very short list of best bbq parlors in the country.

                  Perhaps the thread should be renamed: two days before the day after tomorrow.
